Preparation

  1. Preheat the oven to 200/210°C (392/410°F) and heat the Lanterna Genoese Focaccia for 7-8 minutes until slightly crispy.
  2. Season the mascarpone with salt and black pepper, then spread it evenly over the warm focaccia.
  3. Top with smoked salmon, cherry tomatoes, and baby spinach.
  4. Drizzle with basil pesto and extra virgin olive oil, then serve immediately.
