Mediterranean Focaccia with whipped goat cheese and songino salad

Soft focaccia filled with cherry tomatoes, pesto and mozzarella. Served with green beans and potato salad for a complete, flavour-packed meal.

Lanterna Mediterranean Focaccia

whipped goat cheese

extra virgin olive oil

Preparation

  1. In a small bowl, stir the whipped goat cheese until it becomes smooth and creamy.
  2. Warm the Lanterna Mediterranean Focaccia in the oven at 200/210°C (392/410°F) for 7-8 minutes or until slightly crispy.
  3. Transfer the whipped goat cheese into a piping bag and cut the tip. Gently squeeze to create soft dollops on top of the focaccia.
  4. Add the lamb’s lettuce and finish with a drizzle of extra virgin olive oil for a fresh and elegant touch.

Serving Tip

For an extra burst of flavor, add a sprinkle of crushed walnuts or black pepper.

Serve warm as a sophisticated appetizer or a light Mediterranean lunch.
